The husband is home!!!
This made going to the gym this a.m. a bust. Waking up next to husband and staying in bed > spin class. Maybe I’ll run at lunch….
We’ve been trying hard to eat healthier–especially when he’s on the road for the weekend, we’ve been concentrating on making veggie-loaded meals. This weekend is all about the crock pot.
Yesterday was tomato veggie soup: diced tomatoes, dry onion soup mix, kidney beans, garbanzo beans, zucchini (frozen from our garden!), peppers (also from our garden), and some extra frozen veggies. Yum.
Today is beef stew day–we made a trip to Costco and made a whole bunch of frozen meals to make life easier.
Potatoes don’t freeze well–we discovered that after we made the first packet. Gross. Lesson learned.
Dump some of my special stew slurry on top (beef bullion, water, Worcestershire, tomato sauce, and Costco no-salt seasoning. Fabulous.
Although, I have to be honest. We’re meeting up for happy hour tonight. I would much, muck rather have Carl’s Jr. or Jack in the Box after a couple of beers (mmm….jalapeño poppers…), but homemade stew chock full of veggies is better for you (and your wallet), right? Right?
Still not convinced.
